Cooking method:

1. Heat the milk until warm, but not hot. Add 1 tsp. Sahara.


2. Then 1 tsp. yeast.


3. And 75 gr. flour, stir.


4. Leave in a warm place for 10 minutes.


5. Melt the butter.


6. Beat two eggs into a deep bowl and add vanilla sugar.


7. Add the cooled butter and mix the mixture.


8. Then add the remaining sugar and add a teaspoon of salt, stir.



9. Pour in vegetable oil.


10. Gradually add this mixture to the risen dough.

13. Cover the dough with a clean towel and leave in a warm place for 1.5 hours. When the dough has risen, gently knock it down.

  • Ground cinnamon (for sprinkling)- 1 tsp.;
  • Granulated sugar - 0.5 tsp.

Cooking method:

1. Take a glass and pour some warm water into it. Add sugar, half a tablespoon of flour and yeast. Mix everything well and leave in a warm place. After 10-15 minutes, a yeast foam should appear. This will mean that the yeast has arrived.

2. Take a deep bowl and pour the yeast into it. Pour water and add flour, salt, mustard oil.


3. Mix everything well and knead the dough with your hands.


Cover the dough with cling film and leave it warm to rise.

  • Water - 300 gr.;

Cooking method:

1. Pour warm water into a plate, add yeast and 1 tsp. Sahara. Mix everything and leave it alone for 10 minutes.


2. In a large, deep plate, combine sugar, salt, softened butter and cut into pieces, and flour. Grind the dough into crumbs.


3. When the yeast has risen, pour it into the dough and beat in the eggs. Now knead the dough with your hands.


4. The dough should be covered with a warm towel and left in a warm place for an hour to rise.


5. When the dough has risen, punch it down and divide into equal pieces. Next, roll each part into a flat cake, and put jam in the middle; it is better to take thick jam or use jam.


6. Form the buns and place them on a baking sheet lined with parchment paper. Cover with a damp towel and leave for 30 minutes to allow the pieces to rise.


7. Preheat the oven to 200 degrees. Cover the products with beaten egg and bake until golden brown.

But you can speed up the process a little by using sour milk. Well, or buy ready-made dough, although homemade is 100 times better))

Ingredients:

  • Sour milk - 300 ml;
  • Flour - 600 gr.;
  • Salt - 2/3 tsp;
  • Sugar - 4 tbsp;
  • Vanilla sugar - 1 sachet;
  • Live yeast - 20 gr.;
  • Egg - 2 pcs;
  • Vegetable oil - 1 tbsp;
  • Butter - 50 gr..


Cooking method:

1. Heat the sour milk until warm; it is very convenient to do this in the microwave. Add yeast, 2 tablespoons of sugar and 5-6 tablespoons of flour. Mix everything, cover with a lid and allow time for the yeast to activate. Wait until the foam appears, it will take about 15 minutes.


2. When the dough is ready, add the remaining sugar, salt, vanilla sugar, egg and odorless vegetable oil. Mix everything. Then sift half the flour and add to the consistency, knead into a sticky dough.


3. Then add the remaining flour and knead the dough with your hands.


4. Cover the dough and leave it in a warm place for 30 minutes to rise.


5. After rising, knead it and leave it again so that the dough rises again.



6. After the second rise, divide the dough into 12 balls and roll each into a long flat cake. Then fold the flatbread lengthwise, in half, and roll it into a roll.

  • Sugar - 200 gr.;
  • Yeast - 50 gr.;
  • Butter (softened) - 200 gr.;
  • Eggs (medium) - 4 pcs.;
  • Salt - 1 tsp;
  • Flour - 1.35 kg;
  • Vegetable oil - 1 tsp.

For cream:

  • Milk - 450 ml;
  • Eggs (yolk) - 4 pcs.;
  • Sugar - 170 gr.;
  • Starch (corn) - 75 g;
  • Lemon juice - 2 tbsp;
  • Powdered sugar - for decoration (1 tbsp).

Cooking method:

1. First prepare the dough. To do this, heat the milk, add 200 g. sugar, add crumbled yeast and add 250 gr. flour.


2. Mix everything well, cover with a lid and leave in a warm place for 20 minutes.


3. The dough should increase 2-3 times.


4. Lightly beat the eggs.


5. And pour them into the suitable dough.


6. Then sift the remaining flour and add salt.


7. Take softened butter and cut it into pieces, add to our mixture.


8. Knead the dough with your hands and form it into a ball, sprinkle with flour.


9. Place it in a deep bowl and cover. Leave in a warm place to rise, about 1-1.5 hours.


10. During this time, the dough should double in size.


11. Knead the dough again.



13. Stir everything well so that not a single lump remains.


14. Bring the milk to a boil.


15. Then carefully pour milk into the egg mixture in several additions, stirring continuously.



16. Place the saucepan with the cream on the fire and bring until thickened, stirring the mixture constantly.


Do not bring the cream to a boil.


18. Divide the dough into small balls and roll each into an oval.


19. Step back a little from the edge and put 1 tbsp. cream.


20. Cover the cream with dough and seal the edges well, leaving some free dough. And cut this free part into strips, not reaching the edge 0.5 cm.


21. Then roll the pieces into a roll.


22. Grease a baking sheet with oil, place the products and brush them with beaten yolk.

  • Warm water - 125 ml;
  • Sugar - 125 gr.;
  • Butter - 50 gr.;
  • Dry yeast - 1 sachet (7 g);
  • Flour - 0.5 kg;
  • Egg - 1 pc.;
  • Cherry jam - 150 gr.;
  • Salt - a pinch;
  • Vanilla - to taste.

Cooking method:

1. Mix milk with water, add 50 g. flour and 25 gr. sugar, add yeast. Stir and leave warm for 15 minutes.


2. Beat the egg with the remaining sugar, salt and vanilla, and melt the butter.


4. Divide the risen dough into three equal parts, roll each into a circle and cut into 8 triangles. Place the filling on the wide edge and roll up.

  • Dry yeast - 1 tbsp. with a slide;
  • Butter - 100 gr. in dough, 30 gr. in poppy seed, 2 tbsp. for glaze;
  • Vegetable oil - 2 tbsp;
  • Sugar - 250 gr. into the dough, 4 tbsp. in poppy;
  • Powdered sugar - 100 gr.;
  • Eggs - 2 pcs.;
  • Salt - 1 tsp;
  • Poppy - 150 gr.;
  • Cocoa powder - 4 tbsp. with a slide.

  • dry yeast 1 tbsp. spoon
  • sugar for dusting 1/2 cup
  • sugar for dough 1/2 cup
  • milk 1/2 cup
  • water - 1 glass

  • vegetable oil 3 tbsp. l.
  • eggs 2 pcs.
  • vanillin on the tip of a knife

A 250 ml glass is used.

Preparation:

1. Liquid ingredients of the recipe – slightly heat milk and water. The required temperature is 30 - 35 degrees. Do not heat any further to ensure a comfortable environment for the yeast. Otherwise, they may simply die.

Add yeast and sugar to them for more intense fermentation. Add salt. Even sweet baked goods need its presence. After thorough mixing, remove the bowl to a warm place for 15-20 minutes so that the yeast comes to life and starts working.


If you want, you can make non-sweet pastries using the same recipe. In this case, just don't add sugar. Or rather, add, but only a heaping teaspoon.

2. In a separate bowl, beat the eggs. You should get a fluffy mass. The brighter the yolk of the eggs, the more beautiful the dough will turn out.


3. Add vanillin to the dough and add beaten eggs. Mix. Then add vegetable oil and mix again.


4. Sift the flour and add the first portion to the resulting mixture. Mix.


Then, continuing to stir, add as much flour as needed. Its quantity depends on the variety. It is best to focus on the state of the test. It should turn out soft and plastic, not liquid and not thick.

You should always knead the dough from the middle so that it takes as much flour as needed. Excess flour remains on the sides; there is no need to mix it all in.

5. When it becomes difficult to knead the mixture with a spoon, sprinkle flour on the table and turn it out. Continue kneading on the table. Knead until the dough begins to move away from your hands. However, it should not become hard.


6. Grease a large deep bowl with vegetable oil and place the dough into it. Cover with cling film or towel.


8. After an hour, put the dough back on the work surface and knead it again. Then cut off half and roll into a rope.


Then you can cut it into equal pieces. How many pieces - everyone decides for himself, some like big buns, some like small ones.

9. The shape can also be any - whatever your imagination desires. Today we bake simple versions, so we form ordinary balls from the pieces. We try to form the upper part even and smooth.


10. The baking tray must be preheated and greased with oil. Then place the pieces on a baking sheet and leave for another 1 hour so that they increase in size again. To prevent the dough from drying out, it is better to cover it with a towel.


When you lay out the products, keep in mind that they will at least double in size after baking, so you need to leave enough distance between them.

11. After the allotted time, grease the products with egg yolk or milk. This way they will be even more appetizing.


12. We place our future delicacies in an oven preheated to 180 degrees and bake for about 30 minutes, periodically looking and checking the level of readiness by blush.

It looks very appetizing and attractive, and is eaten very quickly.

Ingredients:

  • milk 300 ml
  • dry yeast 12g.
  • sugar 6-7 tbsp.
  • eggs - 2 pcs
  • butter or margarine 100 g
  • flour 900g
  • vanilla sugar
  • raisins 150g.

From this quantity of products approximately 20 delicious products are obtained.


If you are cooking only for yourself and do not need such volumes, you can simply reduce the amount of all ingredients proportionally.

Preparation:

1. Pour yeast into pre-warmed milk and stir the mixture until it disperses. Add all dry ingredients except flour and mix thoroughly. After about two minutes you will notice that the yeast has begun to swell. Leave the mixture for 10 minutes to rise.


2. Add eggs to the mixture and mix again. It is better to use a whisk for this.

3. Pour melted butter or margarine into the mixture and stir again.


4. Carefully pour the pre-sifted flour into the milk so that there are no lumps and knead the dough. Be sure to sift the flour to saturate it with oxygen. The dough will end up soft and airy.


When kneading in the bowl becomes difficult, turn the dough out onto a floured counter. Knead it until it stops sticking to the table and hands. But at the same time it should remain quite soft.


5. Add raisins to the finished dough and knead them thoroughly again.

6. Place the dough in a bowl greased with vegetable oil, cover with a towel and leave in a warm place until it increases in size.


This will take approximately one hour. And if the room is cool, then even more.


7. When it doubles in volume, roll it into a rope and divide into 18 - 20 equal pieces. This time we will make buns in the form of knots.


To do this, stretch each piece into a flagellum 20-25 long and roll it into a nice knot, hiding the edges down.


8. The final stage is to place the blanks on a preheated baking sheet lined with parchment paper, cover with a towel and leave for about 10 more minutes to rise.


Before putting in the oven, brush with yolk.


Bake for 25 - 30 minutes at 180 degrees.

  • milk 1.5 cups
  • sugar 0.5 cups
  • butter or margarine 100g
  • 1 egg for greasing
  • a pinch of salt
  • vanillin 1/4 tsp

For filling:

Do not try to add a lot of flour, because of this the baked goods may turn out tough and rough. The dough should be in such a state that it does not stick to your hands or to the table, while remaining soft, mobile and elastic.

5. After kneading, prepare a deep bowl. Grease it with vegetable oil and put the dough in it, which is also greased with oil. To prevent it from drying out, it should be covered with a towel. And for it to rise, you need to put it in a warm place.


Depending on the temperature in your kitchen and the quality and freshness of the yeast, the dough will take approximately 1 to 2 hours to rise and rise.


6. And as soon as it increases in volume at least twice, it will be possible to work with it further.

7. Place the finished dough on the work surface and knead it thoroughly again. Then form an even thin rectangle by rolling it out with a rolling pin. Or you can simply stretch it with your hands. Or you can use both at the same time.


8. Place a layer of butter, sugar and poppy seeds alternately on a thin layer.


9. Next, we roll the layer of dough into a roll to make a long sausage. Do not roll it tightly, otherwise there will be no room for the dough to grow. We divide the roll into pieces 6-7 cm long. These will be our beautiful future delicacies.


10. We pinch each piece from the bottom so that the oil does not leak out. You should get a beautiful, attractive rose on top.


Place the products on a parchment-lined and greased baking sheet. If available, you can use a silicone mat. And let the dough rise again. To prevent it from drying out, cover the baking sheet with a towel. The time to rise can be from 20 to 40 minutes.


11. Before putting the baking sheet in the oven, you should grease our products with yolk or milk. They need to be baked for 25 - 30 minutes at 180 degrees. Until they become rosy and beautiful.

11. A flour product is considered ready when it is sticky, but does not stick to your hands. If it is not like that, then there is not enough flour.

12. Time: the longer we knead it, the more carbon dioxide comes out, which helps oxygenate our mass.

13. Draft: the dough does not like it when there is wind in the room. This cools it down, which means it won’t be as manageable and won’t be fluffy. The oven should also not be opened so as not to cool it. Avoid temperature changes.

Recipe for delicious yeast dough with milk

This recipe is also called sponge recipe, but it does not require much time to rise. On average, it takes about 1.5 hours of total time.

3. Sprinkle the table with flour and continue kneading on it for 5 - 7 minutes. After this it will become soft and obedient.

4. Grease the cup with vegetable oil and transfer the mixture into it. Cover with cling film. Leave to infuse for 1.5 hours at room temperature. During this time it will increase in volume by 2 times. Keep this in mind when choosing your bowl size.

How to make sweet dough with sugar

2. Melt the butter and cool. Pour into our mixture. We also put eggs, sugar, salt and vanillin into the container. Whisk.

3. Sift the flour through a sieve and mix it into the mixture in parts. The amount of flour is approximate, since it is different for everyone. If it is runny, add more. At the end, add vegetable oil.

The flour mass should be soft and elastic.

4. Transfer it to a larger container, having previously greased it with vegetable oil. Cover with cling film or lid. Leave to increase in volume. Then knead again and cover again. After 40 minutes you can sculpt it into whatever you want.

  10. Leave the formed pieces for a quarter of an hour so that the dough can straighten out a little and rise again.
  11. Brush the tops of the buns with the second yolk and place in the preheated oven.
  12. Bake at 200 ºС for a quarter of an hour.

Cooking with milk

Milk will produce baked goods with a very delicate crumb and an almost creamy taste.

Ingredients:

  • 700 g flour;
  • 350 ml milk;
  • 10 g instant yeast;
  • 100 g butter;
  • 30 g sugar;
  • 10 g salt.

This dough is also prepared in advance, one and a half to two hours before serving.

  1. Bring 250 ml of milk to a boil.
  2. Place butter in it and wait until it melts.
  3. Measure out a third of the flour and pour the still hot mixture into it.

  6. Mix the yeast with the remaining flour and pour milk into it. Knead into a soft dough. Let it rise warm.
  7. Form buns. The preparations should rest for another 10 - 15 minutes.
  8. Brush them with sweetened milk to form a golden brown crust.
  9. Bake at 180 ºС for 20 minutes.

Butter baked goods “as simple as shelling pears”

Elastic buns with a delicate airy crumb can be used for hamburgers, served as a first course or for tea.

Ingredients:

  • 500 g flour;
  • 250 ml milk;
  • 10 g dry yeast;

Cover with a lid and put in a warm place. If after a quarter of an hour a foam cap forms on the surface, the process is proceeding correctly.

  1. The dough needs to be mixed. Add the remaining ingredients and knead into a soft, elastic dough. A successful dough does not stick to your hands or to the table, and does not require dusting with flour when kneading.
  2. A ball is formed from the dough and placed in a warm place under film for a quarter of an hour.
  3. From the specified amount of products you will get eight buns. Each piece forms a bun. In about five minutes the workpieces are straightened and fit under the film right on the table.
  4. The buns need to be kneaded again. After rolling on the table, shape into an even ball so that the buns turn out high, and place on a greased baking sheet at a large distance from each other.
  5. The baking sheet is again covered with film. At this point the buns should have doubled in size. This may take half an hour, it all depends on the temperature in the room. It’s good if the oven is already warming up at this time, and the buns are placed next to it at a temperature of 30 - 35 ºС. The total time spent proofing the dough is no more than an hour.
  6. Before baking, the buns should be brushed with beaten egg and sprinkled with sesame seeds.
  7. Bake at 180 ºС for a quarter of an hour. Do not remove from the oven immediately, turn off the heat and leave the baked goods for another five minutes with the door closed.

The finished buns should cool under a towel so that the golden brown crust becomes soft.

Recipe for those who are fasting

Despite the short composition, the lean buns turn out fluffy, with a crispy crust and a very tasty crumb.

Products:

  • 500 g flour;
  • 250 ml water;
  • 10 g dry yeast;
  • 80 g vegetable oil;
  • 10 g sugar;
  • 10 g salt.

If you add raisins and vanilla to the dough, you will get sweet tea buns. If you add bran and flax seed, the same dough will yield completely different baked goods. Often the dough is divided in half, additives are added, and buns with different flavors are baked on the same baking sheet.

  1. Knead into a smooth dough.
  2. Place in a warm place, covered, for an hour until the dough rises. Its volume should approximately double.
  3. Knead the dough. Divide into portions and arrange into round or oval buns. Decorate the surface with notches using a knife or scissors.

  • 440 g flour;
  • 10 g dry yeast;
  • 150 g sugar;
  • vanilla extract;
  • 20 ml cognac;
  • egg;
  • 50 g melted butter;
  • fresh lemon zest - to taste.

For baking, you will need a baking tray with high sides so that the sauce does not “run away”.

  1. All ingredients are combined in a deep bowl.
  2. First, mix the mixture with a spoon, then with your hands. The dough turns out sticky, there is no need to put it on the table.
  3. Since the dough is quite fatty, it will take at least two hours to proof.
  4. For the sauce, mix: 150 g sugar, 200 ml cream, vanilla extract.
  5. Pour the sauce into a baking tray.
  6. Pinch off equal pieces of dough, roll them lightly in your hands and place them in the sauce.
  7. Leave the workpieces to “rest” for a quarter of an hour.
  8. Grease the parts of the workpieces protruding from the sauce with yolk.
  9. Bake for half an hour at 180 ºС. During this time, drizzle the sauce over the buns several times.

Cool on a wire rack. The cream remaining in the pan can also be served with tea.

Quick buns without yeast

It often happens that there is no time for baking. The simplest yeast dough requires at least an hour to proof. Quick bun dough can be kneaded without using yeast. In this case, baking powder will add fluffiness to the baked goods.

Ingredients:

  • 450 g flour;
  • 100 g sugar;
  • 10 g salt;
  • 10 g baking powder;
  • 80 g butter;
  • 50 ml milk.

The time saved on dough preparation can be spent on impressive baking design. For the layer you will need cinnamon, butter and sugar.

  1. It is important to sift the flour thoroughly to ensure soft baked goods.
  2. Combine ingredients, knead soft dough.
  3. Quickly roll it out into a layer of 1.5 - 2 cm. The reaction in the dough is already underway, it is not advisable to knock out gas bubbles from it.
