Classic recipe for Caesar dressing with anchovies. Caesar dressing – classic and creative

Many people don't even know about anchovies, that they are small fish that live in salt water, of which there are more than 100 different species scattered across the waters of several oceans. They tend to gather in large flocks, which makes it very easy to catch large numbers of them at once. One of the most popular places to catch anchovies is the Mediterranean Sea, which is why they are so common in recipes from parts of Europe, the Middle East and North Africa.

Their taste may not be entirely palatable to many people, but those with health problems will have to learn to love these salty little fish, which are usually sold in glass or tins and can be put on pizza, sandwiches, Caesar salad and... sauce.

What are the health benefits of eating anchovies? Not everyone knows that this improves the functioning of the heart muscle, reduces the level of bad cholesterol and toxins. They help improve skin condition, lose weight and strengthen teeth. Consumption of anchovies also reduces the risk of osteoporosis. The nutrients and vitamins found in them are the main factors behind the wide range of benefits that people enjoy when adding fish to their weekly diet! Anchovies - what are they? Photos, recipes and information about the beneficial properties of this fish will give you a comprehensive answer to this question.

Nutritional value of anchovies

This fish is rich in proteins, vitamins and minerals that help in maintaining good health. It contains calcium, a lot of iron, magnesium, as well as phosphorus, potassium, sodium and zinc. Anchovies are a good source of vitamins: thiamine, riboflavin, niacin, A, vitamin E and vitamin K. They also contain fatty acids.

Anchovies have many amazing health benefits, let's discuss these in more detail.

Improve heart health

It has been found that anchovies contain a huge amount of fatty acids (polyunsaturated), which can reduce the amount of bad cholesterol that accumulates in the arteries, and reduce the likelihood of developing atherosclerosis, heart attack and stroke. Omega-3, found in large quantities, actually dissolves unhealthy cholesterol and blocks it from attaching to artery walls, thereby eliminating it from the body.

Restore tissues and cells

Protein-rich anchovies have long been known to enhance the functioning of cellular metabolism and connective tissue, and play a significant role in tissue repair. Adding fish to your diet can improve your body's ability to heal itself.

Improve skin condition

As mentioned, anchovies are excellent sources of essential fatty acids such as Omega-3, as well as vitamin E and minerals such as selenium. All of these nutrients have been proven to promote healthy skin. This means that consistently adding anchovies to your diet can help you maintain an even complexion, prevent inflammation, and even reduce the likelihood of the early appearance of wrinkles associated with premature aging. Vitamin E may also help protect against sunburn, thereby helping to reduce the risk of developing skin cancer.

Improves bone health

The vitamins and minerals contained in anchovies help maintain bone strength and prevent the risk of osteoporosis and other diseases. Calcium and vitamin A have a positive effect on bone growth, making these tiny fish very useful in the fight against weakening bone tissue. Calcium is also integral in protecting teeth from decay, keeping them strong and healthy even into old age.

Promotes weight loss

Anchovies have a significant amount of protein and are low in calories, making them ideal for people trying to lose weight. High levels of protein help you feel full quickly, which prevents you from overeating and taking in extra calories!

One of the main dangers of frequent consumption of fish is the high levels of mercury and other toxins absorbed from the environment that can often be found in their bodies. Small fish contain much less toxins, in particular due to their short lifespan, and therefore even consuming large quantities of anchovies will not harm the body, but on the contrary, will bring even more benefits.

Improves eye health

As stated above, anchovies are rich in vitamin A, which is known to improve eye health. Chronic intake of vitamin A has been associated with a reduction in the manifestations of retinal dystrophy, as well as cataracts.

Select and store

Salted or canned, these fish are easily available in the market. Make sure by smelling and inspecting the anchovies that it is a fresh product and that the fish has been in the refrigerator for no more than 24 hours after opening the sealed container. Fresh product or minced meat can also be purchased and cooked from it. Due to their strong aroma, they are used as an ingredient in various salads and sauces.

Some people think that it is not easy to prepare a restaurant salad with anchovies. It’s easy to repeat the recipe at home.

For the croutons, preheat the oven to 180°C. Trim the crusts from the bread and tear the remainder into small pieces. Toss them in a bowl with olive oil. Place them on a baking sheet and bake for 5-7 minutes or until crisp and golden. Remove and leave to cool. Then sprinkle lightly with salt.

Place the eggs in a saucepan of boiling water and cook for 8 minutes. Drain the boiling water and add cold water. For the sauce, place the garlic, egg yolk, mustard, lemon juice, sugar and seasonings in a small bowl. Mix with an electric whisk, then slowly whisk in the butter to make a sauce.

Discard the outer lettuce leaves and tear the rest into small pieces. Wash and dry well, then divide among 6 medium plates. Peel the hard-boiled eggs and cut them into quarters. Place 4 pieces of egg on each plate on lettuce leaves, anchovies and a few croutons. Drizzle 1 tablespoon of the sauce onto each plate and serve immediately.

When ready, spread the cheese slices over the bottom halves of the buns, then top with the parsley-anchovy mixture and cover with the other half of the bread.

Today, light and dietary dressings for dishes are becoming increasingly popular among supporters of a healthy diet. Caesar sauce is not only a great accompaniment for a classic chicken salad, but also a very tasty component of pizza.

Peculiarities:

  1. Caesar sauce was invented in the USA about a hundred years ago during Prohibition. Its creator, Caesar Cardini, served the salad of the same name with the legendary sauce for the first time - on Independence Day - in his restaurant.
  2. The dressing is based on Worcestershire sauce, which first appeared in England in the second half of the 19th century. It was this sauce that gave the Caesar salad a hint of fishy flavor.
  3. Despite the fact that Caesar dressing was invented simultaneously with the famous salad recipe of the same name, today this dressing is used for various main courses. The most important thing is that the sauce invariably includes almost raw eggs and anchovies.
  4. By the end of cooking, the volume of Caesar sauce usually increases by one and a half times.
  5. If you made the dressing at home, it should be homogeneous and resemble liquid sour cream. The sauce should be stored in a cool place for no more than two days and shake before use.

Traditional option

If you stick to the classic recipe, making Caesar dressing at home is not easy. Many people may think that the ingredients are too difficult to buy in the store. However, if you still keep the true recipe unchanged, you can get a dressing whose taste will exceed all your expectations. You will need:

  • 2 tsp Worcestershire sauce;
  • 2 raw eggs;
  • half a glass of olive oil;
  • 2 cloves of garlic;
  • juice of half a lemon.

Real Caesar sauce requires very careful preparation of the ingredients. So, the eggs should not be very cold, they need to be warmed to room temperature.

Cooking process:

  1. The eggs should be pierced on one side with a needle and placed in boiling water for just a minute until they are just slightly cooked.
  2. After this, break the eggs into a bowl, add the sauce, lemon juice, and chopped garlic.
  3. Then the mixture is stirred and olive oil is added. By the way, the classic dressing recipe involves using either non-first-press oil or refined oil. Otherwise, the flavor notes of the sauce will be overwhelmed.
  4. The oil must be added gradually and do not stop stirring the mass.
  5. You can then add salt, pepper, and various herbs and spices to taste. (Lemon juice, by the way, can be replaced with wine vinegar).

Now the classic sauce with the proud name “Caesar” is complete!

Sauce with mayonnaise

The recipe for Caesar sauce based on homemade mayonnaise is liked by many modern cooks. The fact is that the composition of such a dressing is simpler, but at the same time the taste is as close as possible to the classic one. This is possible thanks to the eggs that are part of traditional mayonnaise. So, you need to take:

  • 200 ml mayonnaise;
  • 2 tsp Worcestershire sauce;
  • garlic clove;
  • juice of half a lemon;
  • ground pepper.

Cooking process:

Let's start with the fact that, if you wish, you can prepare your own original mayonnaise at home. To do this, you need to take one egg yolk, 350 ml of sunflower oil, a spoonful of lemon juice and salt. As for Worcestershire sauce, many people prefer to replace it with a tablespoon of anchovies, but they are not always found.

  1. First you need to crush the garlic and mix mayonnaise, sauce, lemon juice and pepper in a blender. If you use anchovies, add them along with the garlic last, and then turn the dressing into a homogeneous mass.
  2. If you want to slightly soften the flavor of the anchovies, you can add a little honey to the recipe. Very often, Caesar sauce with mayonnaise contains grated Parmesan cheese. It is worth noting that this ingredient is used primarily to dress the legendary Caesar salad with chicken.

If you want a less calorie and creamy dressing, try making Caesar dressing with yogurt or sour cream.

Recipe without anchovies

Not all housewives like to prepare Caesar sauce with anchovies. The taste is rich, but very specific; moreover, this product cannot be found in all stores. The same goes for Worcestershire sauce. However, there is another recipe for the mixture for second courses. Have to take:

  • 2 eggs;
  • lemon juice;
  • half a glass of olive oil;
  • 2 tbsp. "Parmesan";
  • 2 tsp mustard (it’s better to take French mustard);
  • 2 cloves of garlic.

Cooking process:

  1. We cook the eggs using a special method, as in the classic recipe. Then break them into a bowl, add lemon juice and beat.
  2. Add cheese, mustard and garlic.
  3. After thoroughly beating, gradually add oil. Please note that grain mustard and Russian mustard are not suitable for this recipe.

In this case, the taste of the mixture will be too sharp and vigorous. Instead of French, you can use American or sandwich mustard. Mustard-based Caesar dressing is stored in the same way as traditional dressing.

Quick sauce

An excellent Caesar dressing can be made from ready-made ingredients, so as not to waste time searching for ingredients in the store and significantly save your energy. You need to take:

  • 150 g garlic sauce;
  • 1 tbsp. soy sauce;
  • pack of Caesar salad dressing.

Cooking process:

Mix all the ingredients and try to achieve maximum homogeneity of the resulting mixture. You can safely serve this simple dressing with a variety of main courses.

By the way, if you don’t have time to prepare sauces for chicken Caesar or seafood salad, you can buy a completely finished product. Thus, ready-made Caesar dressing from Heinz consists of natural vegetable oils and contains all the necessary ingredients without any preservatives.

For the salad

Today, the Internet presents a variety of photos with recipes for the legendary Caesar salad. It can be made with chicken fillet, smoked chicken or seafood. In any case, the traditional recipe is best suited for dressing. But if you don't have Worcestershire sauce, you can try something new. Take the following ingredients:

  • 2 egg yolks;
  • 2 tsp mustard;
  • 100 ml olive oil;
  • 50 g Parmesan cheese;
  • 50 ml dry white wine;
  • garlic clove;
  • lemon juice.

Cooking process:

  1. Using a blender, combine all ingredients except butter and cheese.
  2. Olive oil is poured into the mixture in a thin stream later, after achieving complete homogeneity. Then add grated Parmesan and mix.
  3. Mustard is a great substitute for Worcestershire sauce in this recipe, but you can use mayonnaise to make the chicken Caesar salad more tender.
  4. If you use crushed anchovies during the cooking process, then it is best to add this dressing to a salad with shrimp.

For pizza

Caesar sauce is an excellent topping for pizza. Interestingly, the American recipe and the Italian dish go together very well, and besides, the mixture can be made with different compositions. You will need:

  • 1 tbsp. mustard (Dijon);
  • 1 egg yolk;
  • 3-4 anchovies;
  • a spoonful of chopped garlic;
  • 1 tsp lemon juice;
  • 2 tbsp. vinegar (can be wine);
  • 1 tsp Worcestershire sauce;
  • a glass of olive oil;
  • half a glass of fresh Parmesan.

Cooking process:

  1. Mix all ingredients except oil with a mixer.
  2. Add it drop by drop without stirring the mixture.
  3. The end result should be a light and thick pizza sauce.
  4. You can also add various spices and even capers to this dressing, because the taste of the pizza should be rich and memorable. The main thing is to try to mix the entire mass, and do not beat it, violating its integrity.
