Okroshka calories on kvass with sour cream. Okroshka recipe

Okroshka is practically our national pride. This is an original Russian dish with a long history. Delicious cold soup was always included in the summer diet of peasant workers: it charged them with energy and refreshed them in the scorching heat. This dish is still popular today. The calorie content of okroshka prepared according to a traditional recipe is low. But a bowl of this wonderful soup is perfectly filling and refreshing.

Ingredients

Before we move on to a direct discussion of the burning question of how many calories are in okroshka, let's figure out what might even be included in the list of ingredients for this dish. And there are many variations. For example, vegetarian okroshka, as a rule, contains a maximum variety of vegetables. Dietary is prepared with the least fatty meat. The calorie content of okroshka directly depends on the set of ingredients, as well as on what you pour into the base (kvass, mineral water, kefir, etc.).

This soup may include:

  • a variety of vegetables: potatoes, radishes, cucumbers, various types of cabbage, onions in all variations, carrots, tomatoes, turnips, beets, rutabaga and many others;
  • greens, the variations are endless - from traditional parsley and dill to basil and tarragon;
  • eggs;
  • meat and offal (any);
  • sausage products: various types of sausages, frankfurters;
  • all kinds of fish and seafood;
  • fruits and berries (for example, apples or cranberries).

And there are so many options for liquid refills! Initially, okroshka was prepared with kvass. And now – whatever your imagination tells you. This includes kefir, kombucha infusion, yogurt, mineral water, ayran, whey, and even mayonnaise diluted with water. True, the last option is absolutely not constructive from a nutritional point of view.

How many calories are in okroshka

It is difficult to consider all the options for this soup and calculate their calorie content. After all, there are hundreds of recipes! Therefore, we will “analyze” the most common variations of this cold soup:

  • The calorie content of traditional okroshka (with meat, potatoes, kvass) is about 57-70 kcal per 100 g (much depends on the type of meat - pork increases the number of calories, and lean beef decreases).
  • Cold fish soup has only about 55 kcal per serving (with lean fish).
  • Diet okroshka with chicken breast, prepared with kefir, contains an average of 52-57 kcal per 100 g.
  • The vegetarian version of the dish contains only 40-48 kcal per 100 g.
  • But the dish with sausage is the most high-calorie - about 88 kcal per 100 grams. Indeed, fat is added very generously to modern sausages (even boiled ones).

Now you have an idea of how many calories are in okroshka. This information will help you regulate the energy value of the dish.

The calorie content of okroshka can be reduced by choosing the “right” base. The least high-calorie foods are kefir and kvass. Soup with kvass contains from 52 to 60 kcal, and with kefir - about 47 kcal per 100 g. Of course, this is when choosing low-fat products, without sausage, mayonnaise, etc.

Delicious dietary okroshka

  • Any types of meat. To get it, opt for boiled lean poultry or beef.
  • Sausages. If possible, replace smoked meats with low-fat milk sausages or diet boiled sausage.
  • Eggs. Keep in mind that the yolk contains more calories than the white. In addition, it can cause allergies.

Therefore, in order to reduce the calorie content of okroshka with kvass sausage, you can, for example, refuse to use eggs. It is also worth reducing the proportion of boiled potatoes, replacing them partially with other vegetables - cucumbers, radishes or radishes. And to generally increase the thick mass, use more greens, saturating the dish with additional vitamins.

Vegetable okroshka: calorie content of the dish

Are you a strict vegetarian? In this case, you will have to completely exclude meat and dairy components from the composition. What then will it consist of, having a calorie content on average of no more than 35 Kcal? The following are usually used as a basis:

  • mineral or plain boiled water in cold form (its taste is refreshed with lemon juice);
  • kvass;
  • vegetable broth or juice (tomato, cucumber, cabbage);
  • fruit broth (compote, fruit drink);
  • marinade from canned cucumbers, tomatoes, watermelons, etc.

To “fill”, take vegetables - cucumber, radish, turnip, zucchini, radish, pumpkin, sweet pepper. Potatoes, carrots and beets are usually used boiled until tender. The remaining vegetables are introduced into the dish raw; they must be cut into cubes. Also an obligatory component is various finely chopped juicy greens, added to each plate just before serving.

Try new cooking options, combining unusual ingredients to your taste!

Its big advantage is that the food is not only tasty, but also filling. However, there is another positive quality of this dish - its relatively low calorie content.

It is difficult to find a person who has never heard of okroshka. The decades-old recipe for this delicacy still remains the same and will likely last for many years to come. Of course, like any dish, not everyone will like okroshka, but for many it is the most favorite and easiest to prepare.

How to cook?

Trying okroshka is a must, especially since it’s so easy to prepare. It does not require the intricate skills of a skilled cook, but will delight you on any table, both on a holiday and on an ordinary weekday.

When choosing kvass, it is advisable to give preference to kvass in barrels rather than bottled kvass, and an excellent meat option is beef or boiled tongue.

Preparation:

1. Boil the potatoes in advance (preferably boil them in their skins).

Fashion dictates its own rules to us, and if in the old days obesity was considered a sign of prosperity, today obesity is an epidemic. In light of this, proper nutrition and diets have become a real boom of our time, and the question of the energy intensity of familiar dishes torments many, and today we will find out how many calories are in okroshka. For all its lightness, this soup is quite filling due to the protein and starchy ingredients in its composition, and some of the filling options are questionable.

Well, in this article we will analyze each ingredient of a summer dish at the molecular level in order to reveal all its secrets and find out for sure whether okroshka is as high in calories and harmful to the figure as some diet adherents scare us. Or maybe these are all empty prejudices?

Okroshka. Benefits and harms

The composition of okroshka is very rich and varied. This summer soup includes almost all the fresh vegetables from the garden: radishes and cucumbers, potatoes and herbs; carrots and beetroot are also added in some versions of this dish.

Vegetables and herbs are the main source of dietary fiber necessary for the smooth functioning of the digestive system. At the same time, this garden cocktail very generously provides us with vitamins A, E, D, K and the full B list, as well as almost all the necessary minerals. This valuable complex of benefits perfectly replenishes the daily requirement of essential substances for our body.

And this is only a small part of what okroshka is really useful for.

Eggs and boiled lean meat act as the protein base in cold stew. These two components are very important for humans as an energy boost and a more useful and dietary analogue of carbohydrates. Protein is also extremely important for people actively involved in sports. At the same time, egg yolk contains a neurotransmitter, choline, vital for our nervous system.

But do not forget that okroshka is a cold dish and there is no place for insoluble fats in it, so it is better to avoid sausage in its composition altogether, replacing “Doctorskaya” with boiled chicken breast, lean fish or lean veal.

As we can see, the benefits of traditional Russian cold soup are obvious, but the question remains: are there many calories in okroshka?

You will learn more about this from our calorie table for different types of okroshka, which is given below.

The indicators are quite impressive, and in order to lower the energy intensity of summer soup there is only one way out, to prepare the soup without mayonnaise. You can also do without sugar-containing kvass by mixing okroshka, for example, with mineral water, which, among many dressings, holds the record for the lowest calorie content of summer soup.

In addition, you can make a very tasty, sparkling and light in terms of calories dressing mixture from low-fat kefir with carbonated mineral water. This okroshka turns out to be very tasty and healthy, and the most important thing is that it is without a doubt a dietary, balanced dish.

Calorie content of okroshka

Okroshka is a traditional dish of Russian cuisine, a cold soup made from vegetables, meat or fish and a special dressing. Originally Russian okroshka was prepared from turnips and black radish and seasoned with a special leaven - okroshka kvass. Currently, the recipe for this Russian cold soup has changed significantly. Okroshka, the calorie content of which depends on its component composition, is quite easy to prepare. How to properly prepare okroshka for weight loss? Is okroshka good for daily consumption? What is the calorie content of okroshka with kvass?

Okroshka: calories, ingredients, beneficial properties, recipes

Despite the simplicity of preparing traditional cold soup, okroshka, the calorie content of which depends entirely on the ingredients in its composition, must be prepared using the correct technology, otherwise the dish may turn out not only tasteless, but also significantly harm your health.

Today there are three types of okroshka: vegetable, meat and fish. For ease of preparation, meat is often replaced with boiled sausage and smoked meats, which undoubtedly adds calories to the okroshka.

The main ingredients for vegetable okroshka, the calorie content of which reaches 45 calories per 100 g of finished soup, are:

  • Boiled potatoes;
  • Boiled carrots;
  • Fresh cucumbers;
  • Fresh radish;
  • Spicy herbs and greens (dill, parsley, green onions, celery, cilantro, horseradish);
  • Boiled eggs.

To prepare, you will need half a loaf of Borodino bread, 50g of raisins, 2 liters of water, a small bunch of mint or a bag of mint tea.

First, mint is brewed with boiling water in a glass. The bread is cut into cubes and placed in a container in which the kvass will mature. The raisins are washed, dried and placed on the bread. The mint infusion is poured into a container with bread and raisins, and up to 2 liters of boiled warm water is added there. The container is closed with a lid.

You can use jars, jugs with lids, or empty plastic bottles as containers. The container should stand in a warm place for 24 hours, after which the kvass is filtered from the bread and raisin starter through cheesecloth and cooled in the refrigerator.

Kvass is ready, it is not only an excellent dressing for okroshka, but also quenches thirst quite well. In addition, it also affects the calorie content of okroshka, because the calorie content of white kvass is lower than regular kvass..

If you want to make okroshka using whey, you can either purchase the whey at a dairy store or prepare it yourself. To do this, you need to heat, without bringing to a boil, and leave warm the amount of milk you need. In 12 hours the milk will sour to yogurt. Then you need to heat the curdled milk over low heat until it curdles. Do not bring curdled milk to a boil. The finished cottage cheese, which will curdle before your eyes, needs to be strained through cheesecloth - the separated liquid is your finished whey. The cottage cheese you made can also be eaten, it is very tasty.

For comparison: one hundred grams of kvass contains 27 kcal, and the same amount of one percent kefir or whey contains 50 kcal and 30 kcal, respectively. You can calculate the difference in calories in okroshka with different dressings yourself. Although the calorie content of okroshka with kvass and the calorie content of okroshka with kefir or whey at first glance differ slightly, when dieting, every calorie can be important.

Diet on okroshka

If the calorie content of okroshka suits you, and you are seriously thinking about an okroshka diet, then we offer you a set of products with which you can independently develop several different okroshka recipes. This will allow you to diversify the taste of okroshka so that you don’t get tired of it, but at the same time there will still be few calories in okroshka. In addition to okroshka, this diet allows you to eat fruits (except bananas and grapes), mineral water, green tea, herbal tea, and fresh vegetables.

Remember that such a diet is possible only if you do not have problems with the stomach and intestines, otherwise it will do more harm than good. You can eat two servings of okroshka per day.

For the diet, vegetable okroshka or okroshka with lean meat is preferable. You can add or remove different ingredients from the dish according to your own taste, but the calorie content of the okroshka will not change significantly.

Classic vegetable okroshka

  • Green onions and other greens to taste;
  • Egg – 1 pc. per serving;
  • Fresh cucumber – 1 pc. per serving;
  • Salt, pepper, mustard to taste;
  • Kvass or low-fat kefir, whey (for dressing).

You can add the following ingredients to this recipe to vary the flavor:

Okroshka is a favorite dish of Russian cuisine. It is not only very tasty, but also healthy. Thanks to this, okroshka is very often included in the diet of people who constantly adhere to a diet and monitor their health and physical fitness.

Composition of okroshka

Classic okroshka consists of five main ingredients:

  • liquid base (kefir, kvass, whey);
  • vegetables;
  • spicy additives and herbs;
  • spices and seasonings;
  • hearty addition (sausage, meat, eggs).

The liquid base for the dish can be:

  • water, water with lemon juice, sparkling water, mineral water;
  • kvass or any other drink made from grain crops. Most often, light and light varieties with a neutral taste are used. Birch kvass is good;
  • fermented milk products, which provide okroshka with kefir calories;
  • vegetable broths, juices (tomato juice, cucumber, cabbage), fruit broths (fruit juice, compote, vegetable pickles, marinades);
  • low-fat broth for meat, fish, poultry.

You can use any vegetables for okroshka. Thanks to the vegetables, the calories in okroshka without adding meat are quite insignificant compared to the calorie content of okroshka with sausage. As a rule, tomatoes are not used to prepare okroshka, but cucumbers, radishes, potatoes, Jerusalem artichokes, sweet potatoes, onions, carrots, cabbage, turnips, sweet peppers, rhubarb, asparagus, radishes, zucchini, eggplant, and pumpkin are used. Okroshka with beets is especially popular.

Onions, dill, parsley, celery, garlic, salad greens, cilantro, horseradish, tarragon, marjoram, basil, etc. are used as spicy additives and herbs. Okroshka spices are salt, ground black and red pepper, vinegar, mustard, sugar, decoctions of bay leaves, cloves, cumin, ginger, cinnamon and even vanilla.

Any type of meat or meat products (sausage, ham, frankfurters, etc.) can be used as a filling supplement. Natural boiled meat is healthier and lower in calories. Lamb, beef and pork, as well as fish, turkey, chicken - all these types of meat are very often used to prepare okroshka. Dried, salted, dried, smoked meat and sausage can also be used.

Preparing okroshka for dieting

The simplest version of low-calorie okroshka is kefir okroshka with vegetables and boiled sausage. To prepare it, all components are crushed, poured with kefir and placed in the refrigerator for an hour or two.

It is recommended to try cooking okroshka with okroshka dressing. To do this, some of the greens used to prepare the dish, garlic, mustard and horseradish, as well as a little black pepper, are ground in a mortar along with salt, and mixed with the liquid base. The resulting mass of okroshka dressing should be thoroughly infused.

Okroshka dressing is added to the chopped vegetable base shortly before serving, everything is mixed and poured into the liquid base. Only after this is the almost finished okroshka seasoned with mayonnaise or sour cream. Meat and vegetable slices are stored in the refrigerator separately from the liquid base for quite a long time. If you plan to eat the okroshka two or three days in advance, you can mix all the ingredients in a large saucepan and put the okroshka in the refrigerator. The dish will not sour or change its taste, but will become even more delicious.
