In my family, almost everyone loves peppers stuffed with meat and prefers the stewed version, when the stuffed vegetables are cooked for a long time in a fragrant tomato-sour cream broth.

How to cook peppers stuffed with meat and rice

This is a very simple recipe and you don’t need to free up several hours of your time. Spend very little time preparing the vegetables and minced meat, and then watch them simmer until done.

To prepare the peppers you will need:

  • mixed minced meat (pork and beef) - 500-600 grams,
  • sweet bell peppers - 6-8 pieces (depending on size, small ones may need more),
  • rice - 0.5 cups,
  • white onions - 2 pieces,
  • carrots - 2 pieces,
  • tomato paste - 2 tablespoons (or fresh tomatoes - 3-4 pieces),
  • salt and pepper to taste.

Preparation:

1. Start by preparing the ground meat to stuff the peppers. The best choice for this dish is the so-called homemade minced meat, which consists of half or half pork and beef. You can take store-bought ready-made minced meat or grind it yourself.

The minced meat that you prepare with your own hands will definitely be tastier, because you will know for sure that only meat was put there.

2. Wash the bell pepper and remove the seeds from the middle. This is very convenient to do by cutting off the top and removing the core with a spoon. Rinse the inside with water so that no seeds remain.

3. Rinse the rice thoroughly and boil it until half cooked. The rice will cook together with the minced meat inside the pepper until it is completely soft. Rice can be boiled even in cold water, and removed when an individual grain is only slightly hard in the middle.

Rice will help the minced meat to hold together well and not fall out of the pepper.

4. Finely chop the onion. Grate the carrots on a coarse grater. Then lightly fry them in a frying pan in vegetable oil until they become soft and just a little golden.

5. Mix together the minced meat, rice and half the fried onions and carrots. To do this, take a separate bowl. As you stir, add salt and pepper to taste. Leave the other half of the onions and carrots in the pan.

6. If you are not using tomato paste, but fresh tomatoes, then they must also be prepared. Remove the skin from them. This will be very easy to do if you scald them with boiling water. Then grate the pulp or grind it in a blender. Make your own tomato puree.

7. Stew the second half of the onions and carrots that we have left along with tomato puree or tomato paste. If you have tomato paste, mix it with vegetables and literally after a minute of frying, add a little water to create a kind of sauce. When stewing, add a little salt, as the tomatoes will give a sweet taste.

8. Take the prepared peppers and stuff them. The minced meat can be applied with a spoon and then compacted firmly so that it completely fills each pepper.

If there is minced meat left, it’s not a big deal. This happens to me sometimes and I make several small meatballs, which I then simmer together with peppers. It turns out very tasty.

9. Place the peppers stuffed with meat and rice in a large saucepan. Ideally, if you can fit everything into one bowl and so that the open part of the pepper is directed upward. But it’s not scary if you can cook them only on their side. In my experience, the minced meat has never fallen out of the peppers.

When you have placed the peppers, cover it on top with onions and carrots stewed in tomatoes, which were waiting in the wings in the frying pan. Pour water on top and simmer covered for about 40 minutes until the pepper is ready.

If the pepper is very large, then you can cook for up to 60 minutes, but no more.

This is an incomparable dish, I cook it on holidays or on special occasions! The pepper is very tasty, and we will stuff it not only with minced meat, but also hide a quail egg inside.   • Green onions - 1
  • Red pepper (for filling) - half

Cooking technology:

1. Before cooking, you need to prepare vegetables and meat. We remove the stalk and seeds from bell peppers, doing everything carefully so that the fruits remain intact and undamaged. Boil the quail eggs until tender, then give them time to cool and remove the shells from these crumbs. Finely chop the onion. Cut half a red sweet pepper into small cubes. Strain the corn through a colander. Finely chop the greens, and cut the green onion into rings. Soak the hard bread in warm water.

  • Minced pork and beef - 1 kg
  • rice - 100 gr
  • Bell pepper - 10 pcs.
  • Carrots - 1 pc.
  • Onion - 1 pc.
  • Garlic - 3-4 cloves
  • Tomato paste - 3 tbsp. lie
  • Tomatoes - 2 pcs.
  • Dill - bunch
  • Vegetable oil - 3 tbsp. lie
  • Salt - to taste

Preparation:

  • Sour cream - 50 gr.

1. First we need to prepare the filling. To do this, rinse the rice very well until the water is clear and boil until half cooked.

I do this: pour cold water over the rice and put it on the stove. Bring to a boil at maximum temperature and turn off the heat. I don’t remove the pan from the stove, so the rice steams perfectly.


2. Peel the onion, rinse in water and cut into thin half rings. Heat the frying pan, pour in a small amount of vegetable oil and fry until transparent, the onion then becomes soft.

4. Cut the chicken into medium-sized pieces and add to the pan with the vegetables.


5. At the very end, peel the large carrots and grate them on a fine grater. Place in a frying pan with meat and vegetables.


6. When the vegetables have acquired a golden color, transfer them to the steamed rice. Add ketchup or tomato paste (sauce), salt and spices to taste, and a little herbs (dill + parsley).


7. Now we need to prepare the sweet peppers. Remove the stem and core, remove the seeds and cut into halves. Grease a baking sheet with vegetable oil and lay out the bell pepper halves.


8. Fill the “boats” with meat and vegetable filling, top with mayonnaise or sour cream, or maybe you like natural yogurt without additives. Sprinkle with hard cheese, which must first be grated coarsely. Preheat the oven to 180C and place our stuffed peppers for 25 - 30 minutes.

Peppers stuffed with minced chicken and rice baked in the oven

A very tasty dish, filling and nutritious. Stuffed with rice and minced chicken, baked in tomato sauce, the peppers taste simply amazing!

Required ingredients:

  • Sweet pepper – 1 kg
  • Chicken fillet - 750 gr.
  • Rice - 2 tbsp.
  • Onions - 3 pcs.
  • Carrots - 5 pcs.
  • Ground black pepper - 1/2 tsp.
  • Salt to taste
  • Vegetable oil for frying - 3 tbsp. lie

For the gravy:

  • Tomato juice – 1 liter
  • Tomato paste - 2 tbsp. lie
  • Sour cream / mayonnaise - 5 tbsp. lie
  • Salt - 1 tsp.
  • Sugar - 2 tbsp. lie


Cooking process:

1. Wash the rice thoroughly in warm water several times. Place in a saucepan, add boiling water and cook for 6 minutes from boiling until half cooked. Next, drain the rice in a colander and rinse under warm water. Leave until completely cool.


2. I prepare the minced meat myself - I separate the fillet from the bone and pass the meat through a meat grinder, and the bones can be used to cook broth for soup or borscht.

If you don’t have the desire or time to bother with meat, you can buy ready-made minced meat in the store.


3. Peel the carrots and onions. Finely chop the onion into cubes, grate the carrots on a grater with large holes. Place the chopped vegetables in a frying pan heated with vegetable oil. Fry until golden brown, stirring constantly.


4. Set aside 4 tablespoons of fried carrots and onions for the filling. Then add tomato juice, tomato paste, salt and sugar to the pan. Bring to a boil, reduce the temperature and let the gravy simmer for 3 minutes.


4. We remove the stalk of the sweet pepper, pressing it inward, and then remove it along with the core. Shake out the remaining seeds and rinse the fruits under running water.

5. In a deep bowl, combine minced chicken, rice boiled until half cooked and 4 tablespoons of onions and carrots fried until golden brown. Add salt and ground black pepper. Mix well and fill the peppers, pressing tightly with a spoon.


6. You can bake in a deep baking pan, a baking dish with high walls, or a duckling/goose pan, as is more familiar and convenient for you. We place our stuffed pieces in one layer in the dishes in which we will bake; there is no need to pre-grease them with oil. My pepper fit in two molds. Pour the tomato sauce on top, which has already been prepared in advance.


7. Preheat the oven to 180 degrees and set to bake for 40-50 minutes. 5 minutes before cooking, remove the pepper. Pour 3-4 tablespoons of sour cream on top, spreading evenly over the surface and return to the oven.


Place it on plates and treat your family and friends to a delicious dish!

The vegetable is able to grow in different climatic conditions, so it can be found in almost any part of the world. Due to its prevalence, accessibility and usefulness, tasty sweet peppers are highly valued in cooking. The vegetable is used to prepare various stews and sauces, fried, stewed and baked, and added to first courses. But stuffed peppers are especially popular among people. You can prepare this dish in different ways - simmer in a pan, steam, or bake stuffed peppers in the oven with minced meat. It can be served as a separate dish or with a side dish.

You can use vegetables of different colors for stuffing. Please note that all varieties taste slightly different. The sweetest pepper is red, and the unsweetened one is green. It is best to bake all types of vegetables at once. Then the dish will look very bright and elegant.

  • Carrots – 2 pcs.;
  • Onion – 1 pc.;
  • Fresh tomatoes – 4 pcs.;
  • Garlic – 2 cloves;
  • Boiled rice – 1.5 tbsp;
  • Chicken fillet – 300 g;
  • Salt – 1 tsp;
  • Sugar – 5 tsp;
  • Mixture of ground peppers – 0.5 tsp;
  • Dry mint - a pinch;
  • Bay leaf – 1 pc.;
  • Vegetable oil – 100 ml;
  • Broth or water – 1/2 cup;
  • Sour cream for serving - to taste;
  • Green onions - for serving.

How to cook baked stuffed peppers in the oven with minced meat and rice

First you need to prepare the bell peppers. Use a thin-skinned vegetable to prepare this dish. Rinse the peppers, cut off the caps, and then remove the membranes with seeds.


Boil about two liters of water in a large saucepan, add a handful of salt. Place the prepared peppers in water and blanch them for a few minutes. Then turn off the heat and cover the lid. Let the pepper sit in the water.


Peel the onions and carrots. Grate the carrots and chop the onion into small cubes.


Heat vegetable oil in a frying pan, add onions and carrots. Fry them until soft and golden brown. You can also add other vegetables here, depending on the season, to make the filling for the peppers a richer and brighter taste. Today I added one finely chopped potato and half a zucchini. Salt and add spices to taste to the fried vegetables.


To fill, take 4-5 medium tomatoes and make cuts along the top of the peel. Boil water in a ladle and lower the vegetables into it. Turn off the heat and soak the tomatoes in the water for 15 minutes.

Meanwhile, grind the chicken fillet through a meat grinder to obtain minced meat. You can use a mixture of beef and pork instead of chicken.


Pre-boil round rice until half cooked. Then combine it in a bowl with the ground chicken and most of the roasted vegetables. You can also add finely chopped parsley with dill and a clove of garlic to the pepper filling.


Mix the filling. Add salt, a pinch of dry mint, and a mixture of ground peppers.


Peel the scalded tomatoes and puree them in a blender.


Prepare a filling for the peppers using tomato puree. To do this, pour it into a frying pan with the rest of the fried vegetables. Add another half glass of broth or water, add sugar and salt, squeeze out a clove of garlic and throw in a bay leaf. Boil the tomato mixture and simmer for five minutes.


Heat the oven to 180 degrees. Fill the prepared peppers with minced meat and rice filling and place in a baking dish with sides.

Cover each stuffed pepper with a cut-off lid and distribute the filling into the mold. Don’t forget to remove the bay leaf from the filling before doing this. Place the pan with the peppers in the oven for 40 minutes.

How to cook "Hearts" halves of pepper stuffed with minced meat in the oven

Buy a small piece of pork tenderloin and a pepper with thick, meaty walls. You can replace a sprig of small cherry tomatoes with one regular fruit.
Cut the meat into cubes and grind with a blender at the highest speed. The minced meat should be tender, without “interspersed” veins and films.


Salt the resulting meat mass; If you want a spicy dish, add ground black pepper to your taste.


Cut each pepper in half, including the tail. But the cut should not be continuous; the third part of one side remains uncut (see how it is shown in the photo). This will create a shape that resembles a heart. Remove the seeds. Chop one pepper very finely; it is intended for filling.


Chop the onions and tomatoes into cubes, add chopped pepper to them and sauté all the vegetables in vegetable oil.


Place the pepper “hearts” in a baking dish (no need to grease it with oil).

Combine the meat with fried vegetables, add a little chopped garlic and herbs, mix everything thoroughly until smooth.


Stuff the peppers with the resulting filling so that the mound of it rises a little higher (approximately 1 cm).


Cover the pan with foil and place in the oven for 30 minutes, preheated to 180 degrees.
Grate the cheese and mix with a raw egg. After the required time has passed, remove the pan from the oven and brush each pepper with the cheese mixture. Place the “hearts” in the oven for another 5-10 minutes until a golden crust appears (do not cover the pan with foil).
Sprinkle the finished “hearts” along the contour with finely chopped dill. You can decorate the dish with wavy lines of salted butter. To do this, take oil at room temperature and place it in a plastic bag. Cut off a small corner of the bag (cut depth - 2 mm). When pressing the bag, squeeze out a thin stream of oil and decorate the finished snack with it.

Cooking tips:

You can make pepper halves stuffed with minced meat in the oven with any other filling:

  • Add boiled rice until half cooked to the minced meat described above.
  • The filling for vegetarians is rice and champignons fried with onions and carrots (they need to be finely chopped).
  • Instead of pork, you can use chicken breast, cut into small cubes. But the filling will be more tender if the meat ingredient is ground in a blender or meat grinder.
  • Another wonderful filling for those who for some reason do not eat meat is completely vegetable; for it you need to fry small cubes of zucchini or eggplant with onions, carrots and tomatoes.
